Pancake Preparation
1. Make the Pancake Batter
In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, combine the milk, eggs, vanilla extract, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix. Set aside.
2. Prepare the White Chocolate Bread Pudding Filling
In a separate bowl, combine cubed bread, white chocolate chips, and a sprinkle of cinnamon. Toss to coat and set aside.
3. Cook the Pancakes
Preheat a skillet or griddle over medium heat and grease lightly. Pour 1/4 cup of pancake batter onto the skillet. Place a spoonful of the white chocolate bread pudding mixture in the center of the pancake. Top with another 1/4 cup of batter to cover the filling. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
4. Make the White Chocolate Whiskey Sauce
In a small saucepan over low heat, combine white chocolate chips, whiskey, and heavy cream. Stir until smooth and melted. Remove from heat.
