Preparation
Make the Biscuits
Preheat your oven to 425°F (220°C). In a large bowl, mix together the flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick round and cut out biscuits using a biscuit cutter. Place on a greased baking sheet and bake for 12-15 minutes until golden brown.
Prepare the Sausage Gravy
In a skillet over medium heat, cook the country sausage until browned. Remove the sausage and set aside, leaving the drippings in the skillet. Add the flour to the drippings and whisk for about 1 minute. Gradually add the milk, whisking continuously until the mixture thickens. Stir in the cooked sausage and season with black pepper. Keep warm.
Assemble the Dish
Split the warm biscuits in half and spoon the sausage gravy over them. Serve with the cooked eggs and crispy bacon on the side.
