Method

Omelet Preparation

  1. 1

    Cook the Meats

In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels. In the same skillet, add the ham and crumbled sausage, cooking until heated through. Set aside.

  2. 2

    Prepare the Eggs

In a bowl, whisk together the eggs, salt, and black pepper until well combined.

  3. 3

    Cook the Omelet

In the skillet, melt the butter over medium heat. Pour in the egg mixture and let it cook undisturbed for a couple of minutes until the edges start to set. Add the cooked meats and Swiss cheese on one half of the omelet.

  4. 4

    Finish the Omelet

Once the eggs are mostly set, fold the omelet over the fillings and cook for an additional minute. Slide onto a plate and serve.

Grits Preparation

  1. 5

    Cook the Grits

In a pot, bring the water and salt to a boil. Stir in the grits and reduce heat to low. Cook, stirring occasionally, until thickened, about 20-25 minutes.

  2. 6

    Finish the Grits

Stir in the butter until melted and smooth. Keep warm until serving.

Buttermilk Biscuit Preparation

  1. 7

    Prepare the Biscuit Dough

Preheat the oven to 425°F (220°C). In a bowl, mix the flour, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the buttermilk just until combined.

  2. 8

    Shape and Bake

Turn the dough onto a floured surface and gently knead a few times. Pat into a thickness of about 1 inch. Cut out biscuits using a cutter and place on a baking sheet. Bake for 12-15 minutes until golden.
