Southern BLT Preparation

Fry the Green Tomatoes
Slice the green tomatoes into 1/4-inch thick slices. Heat vegetable oil in a skillet over medium heat. Dredge the tomato slices in flour and season with salt and pepper. Fry in the hot oil until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Cook the Bacon
In a separate skillet, cook the Applewood-smoked bacon over medium heat until crispy, about 5-7 minutes. Remove and drain on paper towels.

Assemble the Sandwich
Toast the brioche bread slices until golden brown. Spread mayonnaise on one side of each slice. Layer the fried green tomatoes, fresh red tomato slices, lettuce leaves, and bacon on one slice of bread. Top with the other slice, mayonnaise side down.

Serve
Cut the sandwich in half and serve with fries on the side.
