    Prepare the Grits

    In a medium saucepan, bring water and salt to a boil. Gradually whisk in the stone-ground grits and reduce heat to low. Stir occasionally and cook for about 20-25 minutes until thickened and creamy.

    Cook the Shrimp

    In a large skillet over medium heat, melt 2 tablespoons of butter. Add the pork tasso and sauté for about 3-4 minutes until browned. Then add the diced bell pepper and red onion, cooking until softened, about 5 minutes.

    Add Beer and Rosemary

    Pour in the beer and add the chopped rosemary. Cook for another 5 minutes until the beer reduces slightly.

    Add Shrimp

    Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes. Season with black pepper to taste.

    Finish the Sauce

    Stir in the remaining 2 tablespoons of butter to enrich the sauce. Remove from heat.

    Serve

    Spoon the creamy grits onto plates, top with the shrimp mixture and sauce, and serve alongside warm buttermilk biscuits.
