Spread a generous amount of the cheesecake filling between two slices of brioche to create a sandwich. Repeat for the remaining slices.

Heat a large skillet or griddle over medium heat and melt 1 tablespoon of butter. Dip each stuffed brioche sandwich in the egg mixture, ensuring both sides are coated, and cook in the skillet for 4-5 minutes on each side, or until golden brown.
