    Activate the Yeast

    In a small bowl, combine warm water, yeast, and a pinch of sugar. Let it sit for about 5-10 minutes until frothy.

    Mix Dry Ingredients

    In a large bowl, whisk together flour, sugar, salt, and set aside.

    Combine Wet Ingredients

    In a separate bowl, mix together milk, eggs, melted butter, vanilla, and the activated yeast mixture.

    Form the Dough

    Pour the wet ingredients into the dry ingredients and mix until a soft dough forms. Knead the dough for about 5 minutes until smooth.

    First Rise

    Cover the dough with a kitchen towel and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Beignets

    Roll out the dough on a floured surface to about 1/2 inch thick. Cut into squares or desired shapes.

    Second Rise

    Place the cut beignets on a floured baking sheet, cover, and let rise for another 30 minutes.

    Fry the Beignets

    Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the beignets in batches for about 2-3 minutes on each side until golden brown.

    Remove the beignets from the oil and drain on paper towels. Dust with powdered sugar and serve warm.
