Prepare the Pumpkin Cheesecake Filling
In a mixing bowl, combine cream cheese, pumpkin puree, sugar, eggs, vanilla extract, cinnamon, and nutmeg. Mix until smooth and well combined.

Assemble the French Toast
Take two slices of brioche bread and spread a generous amount of the pumpkin cheesecake filling between them to create a sandwich. Repeat with the remaining bread and filling.

Prepare the Egg Mixture
In a shallow bowl, whisk together the remaining eggs, milk, and a pinch of cinnamon.

Cook the French Toast
Heat a non-stick skillet over medium heat and melt a tablespoon of butter. Dip each stuffed brioche sandwich in the egg mixture, coating both sides. Cook in the skillet until golden brown, about 3-4 minutes per side. Add more butter as necessary.

In a saucepan, combine chopped pecans, brown sugar, and butter. Cook over medium heat until the sugar is melted and the mixture is bubbly. Stir frequently.
