Method
Preparing French Toast Bites

Mix the Egg Mixture
In a large bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and sugar until well combined.

Prepare the Bread
Cut the brioche loaf into bite-sized cubes, about 1 inch each.

Fry the Bites
In a large skillet, heat vegetable oil and 2 tablespoons of butter over medium heat. Fry the soaked brioche cubes until golden brown and crispy on all sides, about 2-3 minutes per side. Remove and drain on paper towels.

Coat with Cinnamon Sugar
In a bowl, mix together the sugar and ground cinnamon for coating. Toss the fried French toast bites in the cinnamon sugar mixture while still warm.
Making the Cream Cheese Icing

Mix the Icing
In a medium bowl, beat the cream cheese until smooth. Gradually mix in the powdered sugar, vanilla extract, and milk until desired consistency is reached.
Preparing the Praline Sauce

Cook the Sauce
In a saucepan over medium heat, combine the brown sugar, heavy cream, and butter. Stir until the mixture begins to boil and thickens slightly. Remove from heat and stir in the chopped pecans.
