    Prepare the Brussels Sprouts

    Trim the ends of the Brussels sprouts and cut them in half. Rinse and dry thoroughly.

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and place on paper towels to drain. Leave about 2 tablespoons of bacon fat in the skillet.

    Sauté the Onions

    In the same skillet, add chopped onions and sauté in the bacon fat until softened and caramelized, about 5-7 minutes.

    Fry the Brussels Sprouts

    Increase the heat to medium-high and add the Brussels sprouts cut-side down in the skillet. Drizzle with olive oil, and sprinkle with salt and black pepper. Fry until crispy and golden brown, about 5-7 minutes. Flip and cook for another 5 minutes.

    Make the Bacon-Onion Jam

    Crumble the cooked bacon and add it to the skillet with the caramelized onions. Stir to combine and cook for an additional 2-3 minutes.

    Glaze with Hot Honey

    Remove the skillet from heat and drizzle the Brussels sprouts with Mike’s Hot Honey. Toss to coat evenly.

    Serve

    Transfer the crispy Brussels sprouts to a serving platter and top with the bacon-onion jam. Enjoy!
