    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo sausage until browned and cooked through. Remove from skillet and set aside.

    Prepare the Beans and Rice

    In the same skillet, add the black beans and cooked rice. Stir together and heat through. Season with salt and pepper. Stir in chopped cilantro before serving.

    Make the Tomato Salsa

    In a bowl, mix diced tomatoes, diced onion, and a pinch of salt. Set aside to let the flavors meld.

    Cook the Eggs

    In the skillet, add a little olive oil if necessary and cook the eggs to your liking (scrambled, fried, or poached).

    Fry the Plantains

    Peel and slice the plantains. In another skillet, heat olive oil over medium heat and fry the plantain slices until golden and crispy. Drain on paper towels.

    Assemble the Dish

    On a plate, layer the black beans and rice, top with the cooked chorizo, place the eggs on top, and add the fresh tomato salsa. Serve with crispy plantains and sliced avocado on the side.
