Method

Prepare the Beignet Dough

Mix Dry Ingredients

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Combine Wet Ingredients

In another bowl, mix the milk, eggs, and vanilla extract until well combined.

Combine Mixtures

Pour the wet ingredients into the dry ingredients and mix until a soft dough forms.

Rest the Dough

Cover the dough with a towel and let it rest for 30 minutes.

Make the Candied Apple Pie Filling

Cook Apples

In a saucepan, melt the butter over medium heat and add the diced apples, brown sugar, cinnamon, nutmeg, and vanilla. Cook until the apples are tender, about 5-7 minutes.

Thicken Filling

In a small bowl, mix cornstarch and water, then add to the apple mixture. Cook for another 2-3 minutes until thickened. Remove from heat and let cool.

Fry the Beignets

Heat Oil

In a large pot, heat oil to 350°F (175°C).

Shape and Fry

Take small portions of the dough, flatten them, and place a spoonful of the apple filling in the center. Fold the dough over and seal. Fry until golden brown, about 2-3 minutes per side.

Drain

Remove beignets and drain on paper towels.

Prepare Vanilla Crème

Whip Cream

In a mixing bowl, whip the heavy cream until soft peaks form, then add powdered sugar and vanilla extract. Continue whipping until stiff peaks form.

Make Sweet Biscuit Crunch

Mix Ingredients

In a bowl, combine flour, brown sugar, and melted butter until crumbly.

Bake Crunch

Spread on a baking sheet and bake at 350°F (175°C) for 10-12 minutes until golden. Let cool.

Assemble Beignets

Top with Crème and Crunch

Drizzle the whipped vanilla crème over the hot beignets and sprinkle with sweet biscuit crunch.
