    Prepare the Omelet

    In a bowl, whisk together eggs, milk, salt, and pepper until well combined.

    Cook the Omelet

    Heat butter in a non-stick skillet over medium heat. Pour in the egg mixture. Cook for about 2 minutes until the edges start to set.

    Add Fillings

    Sprinkle cheese, bell peppers, onion, spinach, and cooked meats over half of the omelet. Fold the other half over and cook for another 2-3 minutes until cheese melts.

    Slide the omelet onto a plate and keep warm while preparing the grits and biscuit.

Creamy Stone-Ground Grits

    Cook the Grits

    In a pot, bring water and salt to a boil. Slowly whisk in the grits, reduce heat to low, and cover. Cook for about 20-25 minutes, stirring occasionally.

    Finish the Grits

    Once the grits are thick and creamy, stir in heavy cream and butter. Adjust seasoning if necessary.

Buttermilk Biscuit

    Prepare the Biscuit Dough

    Preheat oven to 425°F (220°C). In a bowl, combine flour, baking powder, baking soda, and salt. Cut in cold butter until mixture resembles coarse crumbs.

    Stir in buttermilk until just combined. Do not overmix.

    Shape and Bake

    Turn dough onto a floured surface and pat to about 1-inch thickness. Cut into rounds and place on a baking sheet. Bake for 15-20 minutes until golden.
