Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, transfer to a bowl and mix in rice vinegar, sugar, and salt. Allow to cool.

Form the Rice Cakes
Once the rice has cooled, wet your hands and take a handful of rice. Form it into small rectangular cakes, about 2 inches by 3 inches. Repeat until all rice is used.

Fry the Rice Cakes
In a frying pan, heat vegetable oil over medium heat. Carefully place the rice cakes into the hot oil and fry until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.

Prepare the Spicy Mayo
In a small bowl, mix together mayonnaise and Sriracha sauce until well combined. Adjust spiciness to taste.

Slice the Tuna
Thinly slice the Yellowfin tuna into bite-sized pieces.

Assemble the Dish
Place a crispy rice cake on a plate. Top with a slice of Yellowfin tuna and a drizzle of spicy mayo. Garnish with sliced serrano peppers, sesame seeds, and chopped green onions.
