    Prepare the Fish

    Preheat your oven to 400°F (200°C). Clean the Dover sole and pat it dry with paper towels. Season the fish generously with salt and black pepper, both inside and out.

    Brown the Butter

    In a large skillet over medium heat, melt the unsalted butter. Continue cooking, stirring frequently, until the butter turns golden brown and develops a nutty aroma (about 5-7 minutes). Be careful not to burn it.

    Roast the Fish

    Place the seasoned Dover sole on a baking sheet. Pour half of the browned butter over the fish, reserving the rest. Roast the fish in the preheated oven for about 20-25 minutes, or until the flesh is opaque and flakes easily with a fork.

    Prepare Champagne Sauce

    While the fish is roasting, add the champagne to the skillet with the remaining browned butter. Bring to a simmer and let it reduce by half, about 5-7 minutes. Stir in the chopped parsley and adjust seasoning with salt and pepper.

    Serve

    Once the fish is done, remove it from the oven and drizzle the champagne butter sauce over the top. Serve immediately with lemon wedges on the side.
