Prepare the Glaze
In a saucepan over medium heat, combine brown sugar, bourbon, and the seeds scraped from the vanilla bean. Bring to a simmer, stirring occasionally, until the sugar has dissolved and the mixture thickens slightly, about 10 minutes.

Smoke the Bacon
Season the thick-cut bacon with salt and black pepper. Place the bacon strips in the smoker and smoke for about 1 hour, or until the bacon is cooked through and has a nice smoky flavor.

Glaze the Bacon
During the last 15 minutes of smoking, brush the bourbon-vanilla bean glaze over the bacon strips. Allow the glaze to caramelize slightly for the best flavor.
