Directions

  1. 1

    Prepare the Glaze

In a saucepan over medium heat, combine brown sugar, bourbon, and the seeds scraped from the vanilla bean. Bring to a simmer, stirring occasionally, until the sugar has dissolved and the mixture thickens slightly, about 10 minutes.

  2. 2

    Prepare the Bacon

While the glaze is cooking, preheat your smoker to 225°F (107°C) and soak the applewood chips in water for at least 30 minutes. Once ready, drain the chips and place them in the smoker.

  3. 3

    Smoke the Bacon

Season the thick-cut bacon with salt and black pepper. Place the bacon strips in the smoker and smoke for about 1 hour, or until the bacon is cooked through and has a nice smoky flavor.

  4. 4

    Glaze the Bacon

During the last 15 minutes of smoking, brush the bourbon-vanilla bean glaze over the bacon strips. Allow the glaze to caramelize slightly for the best flavor.

  5. 5

    Serve

Remove the bacon from the smoker and let it rest for a few minutes before serving. Enjoy your thick-cut bacon with a rich applewood smoked flavor and a sweet bourbon-vanilla bean glaze.
