    Roasting the Tomatoes

    Preheat your oven to 400°F (200°C). Cut the heirloom tomatoes in half and place them on a baking sheet, cut side up. Drizzle with 2 tablespoons of olive oil, sprinkle with salt and pepper. Roast for 25-30 minutes until they are soft and slightly caramelized.

    Making the Ciabatta

    While the tomatoes are roasting, slice the ciabatta loaf in half lengthwise. Brush the cut sides with the remaining olive oil and toast in the oven for about 5-7 minutes until golden brown.

    Preparing the Stracciatella

    In a bowl, combine the roasted tomatoes, chopped fresh basil, minced garlic, salt, and pepper. Mix well to combine and let it sit for a few minutes.

    Assemble the Bruschetta

    Spread the roasted tomato mixture evenly over the toasted ciabatta. Tear the fresh mozzarella into pieces and scatter over the top. Optionally, drizzle with a bit more olive oil.

    Serve

    Slice the bruschetta into individual pieces and serve immediately while warm.
