    Prepare the Short Ribs

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the short ribs with salt and pepper, then sear them on all sides until browned, about 4-5 minutes per side. Remove from the pot and set aside.

    Sauté Vegetables

    In the same pot, add diced onion, carrot, and celery. Sauté until softened, about 5-7 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

    Combine Ingredients

    Return the short ribs to the pot. Add crushed tomatoes, chopped rosemary, red wine, and beef broth. Stir to combine.

    Simmer the Sauce

    Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 2-3 hours, or until the short ribs are tender and easily shred with a fork.

    Finish and Serve

    Remove the short ribs from the pot, shred the meat, and return it to the sauce. Adjust seasoning with additional salt and pepper if needed. Serve over pasta or with crusty bread.
