Prepare the Ingredients
Preheat your oven to 400°F (200°C). Slice the summer squash and zucchini into rounds and set aside.

Make the Pesto
In a food processor, combine basil leaves, Parmesan cheese, pine nuts, minced garlic, lemon juice, and 2 tablespoons of olive oil. Blend until smooth. Season with salt and pepper to taste.

Roast the Vegetables
In a large bowl, toss the sliced summer squash and zucchini with 1 tablespoon of olive oil, salt, and pepper. Spread the vegetables on a baking sheet in a single layer and roast in the preheated oven for 15-20 minutes, until tender and slightly caramelized.

Prepare the Salmon
Rub the Ora King salmon fillets with the remaining olive oil, and season with salt and pepper. Place the salmon skin-side down on a baking sheet lined with parchment paper.

Roast the Salmon
Once the vegetables have roasted for 10 minutes, add the salmon to the oven and roast for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serve the roasted salmon alongside the roasted summer squash, drizzling the zucchini pesto over the top for added flavor.
