    Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent. Stir in chopped spinach and cook until wilted.

    In a large bowl, combine the sautéed vegetables, cooked quinoa, diced provolone cheese, salt, black pepper, and Italian seasoning. Mix until well combined.
