    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and add the eggs. Mix until a dough forms.

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a bowl, combine the prosciutto, ricotta cheese, grated Parmesan, and black pepper. Mix well until fully combined.

    Roll Out the Dough

    After resting, divide the dough into smaller portions. Roll out each portion thinly using a pasta machine or a rolling pin.

    Fill and Shape the Tortellini

    Cut the rolled-out dough into squares (about 3 inches). Place a teaspoon of filling in the center of each square. Fold the square into a triangle and seal the edges. Bring the two corners of the triangle together and pinch to form the tortellini shape.
