    Prepare the Steak

    Take the dry-aged porterhouse steak out of the refrigerator and let it rest at room temperature for about 1 hour. This helps in even cooking.

    Season the Steak

    Generously season both sides of the steak with kosher salt and freshly ground black pepper. Make sure to pat the seasoning into the meat.

    Preheat the Grill

    Preheat your grill to high heat. If using a charcoal grill, allow the coals to become white hot. If using a gas grill, preheat for about 15 minutes.

    Grill the Steak

    Place the steak on the grill and cook for about 5-7 minutes on one side for medium-rare, depending on the thickness. Flip the steak and grill for another 5-7 minutes, using a meat thermometer to check for an internal temperature of 130°F (54°C).

    Add Aromatics

    During the last couple of minutes of grilling, add the smashed garlic cloves and rosemary sprigs to the grill to infuse flavor.

    Rest the Steak

    Remove the steak from the grill and let it rest for 10-15 minutes. This allows the juices to redistribute.

    Slice and Serve

    Slice the steak against the grain and serve with a drizzle of extra virgin olive oil and the grilled garlic and rosemary on top.
