Prepare the Ratatouille
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

Add Vegetables
Add zucchini, eggplant, red bell pepper, and yellow squash to the skillet. Season with salt and black pepper. Cook for about 10-15 minutes, stirring occasionally, until vegetables are tender.

Add Basil
Stir in the fresh basil leaves and cook for an additional 2 minutes. Remove from heat and set aside.

Sear the Salmon
Place the salmon fillets skin-side down in the hot skillet. Cook for about 4-5 minutes until the skin is crispy. Flip the fillets and cook for an additional 3-4 minutes, or until the salmon is cooked to your liking.

Plate and Serve
Serve the seared Ora King salmon on a plate and spoon the summer ratatouille alongside it. Garnish with additional fresh basil if desired.
