    Prepare the Branzino

    Preheat your oven to 400°F (200°C). Clean the Branzino thoroughly and make 3-4 diagonal cuts on each side of the fish. Rub the fish inside and out with olive oil, minced garlic, sea salt, and black pepper. Stuff the cavity with half of the basil leaves and a few slices of lemon.

    Bake the Fish

    Place the Branzino on a baking sheet lined with parchment paper. Squeeze the juice of half a lemon over the fish and place lemon slices on top. Bake in the preheated oven for about 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.

    Prepare the Salad

    While the fish is baking, prepare the salad. In a large bowl, combine the cherry tomatoes, Kalamata olives, remaining basil leaves, and a drizzle of olive oil. Season with salt and pepper to taste. Toss to combine.

    Serve

    Once the Branzino is done baking, remove it from the oven and let it rest for a few minutes. Serve the fish whole on a platter, garnished with the fresh salad on the side.
