Prepare the Hamachi
Using a sharp knife, cut the hamachi into thin slices, about 1/4 inch thick. Arrange the slices on a serving plate.

Make the Yuzu Ponzu
In a small bowl, mix together the yuzu juice, soy sauce, mirin, and salt. Stir until the salt is dissolved.

Prepare the Crispy Garlic
Thinly slice the garlic cloves. In a small saucepan, heat the vegetable oil over medium heat. Add the sliced garlic and fry until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Plate the Dish
Drizzle the yuzu ponzu sauce over the arranged hamachi slices. Sprinkle the crispy garlic on top and garnish with chives or scallions.
