    Prepare the Gorgonzola Curing Mix

    In a bowl, mix together the Gorgonzola cheese, kosher salt, black pepper, olive oil, rosemary, thyme, and minced garlic.

    Cure the Wagyu

    Rub the curing mix all over the Wagyu NY Strip, ensuring it's thoroughly coated. Wrap the steak tightly in plastic wrap and refrigerate for at least 24 hours, or up to 3 days for a stronger flavor.

    Remove from Fridge and Rest

    After curing, remove the Wagyu from the refrigerator and let it sit at room temperature for about 30 minutes before cooking.

    Sear the Steak

    Preheat a skillet over medium-high heat. Add a little olive oil to the pan. Once hot, sear the Wagyu NY Strip for about 4-5 minutes on each side for medium-rare, adjusting the time to your desired doneness.

    Rest and Serve

    Remove the steak from the skillet and let it rest for 10 minutes before slicing. Serve with your choice of sides.
