Method

Preparing the Seafood

    Clean the Shellfish

    Rinse the Manilla clams and oysters under cold water to remove any sand or debris. Set aside.

    Prepare the Lobster and Crab

    Boil the Maine lobsters in salted water for 8-10 minutes until they turn bright red. Remove and let cool, then split them in half. For the Maryland blue crab, steam it in a pot for about 15 minutes until cooked. Once cooled, crack the crab and remove the meat.

    Grill the Prawns

    Skewer the wild blue prawns and grill them on high heat for about 3-4 minutes on each side, until they are opaque and cooked through.

Making the Curry Aioli

    Combine Ingredients

    In a bowl, mix together mayonnaise, curry powder, lemon juice, minced garlic, and salt until well blended. Adjust seasoning as needed.

Preparing the Drawn Butter

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat until fully liquefied. Keep warm for serving.

Assembling the Seafood Tower

    Plate the Seafood

    On a large platter, arrange the grilled prawns, cooked lobster halves, steamed crab, cleaned clams, and oysters in an aesthetically pleasing manner. Garnish with fresh herbs if desired.

    Serve with Dipping Sauces

    Serve the seafood tower with the curry aioli and melted drawn butter on the side for dipping.
