    Prepare the Patties

    In a mixing bowl, combine the dry-aged ground beef with salt and black pepper. Mix gently to avoid overworking the meat. Divide the mixture into two equal portions and shape them into patties, making a slight indentation in the center of each.

    Cook the Patties

    Heat the olive oil in a skillet or grill over medium-high heat. Once hot, add the patties and cook for about 4-5 minutes on one side. Flip the patties and place a slice of cheddar cheese on top. Cook for another 3-4 minutes for medium-rare or until desired doneness.

    Toast the Buns

    While the patties are cooking, split the brioche buns and toast them on the grill or in a toaster until golden brown.

    Assemble the Burger

    Spread horseradish sauce on the bottom half of each toasted brioche bun. Place a cooked patty with melted cheddar on top, followed by lettuce and a slice of tomato. Top with the other half of the bun.

    Serve the dry-aged steakburger immediately with your favorite side dishes.
