    Prepare the Custard

    In a medium saucepan, combine heavy cream, whole milk, espresso, granulated sugar, and vanilla extract. Heat over medium heat until the mixture is hot but not boiling.

    Whisk the Egg Yolks

    In a separate bowl, whisk together the egg yolks until they are pale in color. Gradually whisk in the hot cream mixture into the egg yolks, ensuring it does not curdle.

    Bake the Custard

    Preheat the oven to 325°F (160°C). Pour the custard mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the edges are set but the center is slightly jiggly.

    Cool and Chill

    Remove the ramekins from the water bath and let them cool to room temperature. Cover and refrigerate for at least 4 hours or overnight.

    Caramelize the Sugar

    When ready to serve, sprinkle a thin layer of granulated sugar over the top of each custard. Using a kitchen torch, carefully caramelize the sugar until it is golden brown and bubbly. Let it sit for a minute to harden.

    Garnish with candied macadamias on top and serve immediately.
