Prepare the crust
In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined, then press the mixture firmly into the bottom of a greased mini muffin tin. Bake at 350°F (175°C) for about 5 minutes or until lightly golden.

Make the cheesecake filling
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth. Gradually add granulated sugar and continue mixing until fully incorporated. Add vanilla extract and egg, mixing just until combined.

Fill the crusts
Remove the crusts from the oven and allow to cool slightly. Spoon the cheesecake filling over each crust, filling them just to the top.

Return the mini muffin tin to the oven and bake for 15-20 minutes, or until the cheesecake is set and slightly puffed. Remove from the oven and let cool completely.
