Bomboloni Preparation

Activate the Yeast
In a small bowl, combine warm milk and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Make the Dough
In a large bowl, mix together flour, granulated sugar, and salt. Create a well in the center and add the yeast mixture, melted butter, eggs, and vanilla extract. Mix until the dough comes together.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for 1-2 hours until doubled in size.

Shape the Bomboloni
Once risen, punch down the dough and turn it out onto a floured surface. Roll it out to about 1/2 inch thick and cut out circles using a cookie cutter. Let the circles rest for about 30 minutes.

Fry the Bomboloni
In a large pot, heat vegetable oil to 350°F (175°C). Fry the donuts in batches until golden brown on both sides, about 2-3 minutes each. Drain on paper towels.

Fill with Nutella
Once cooled slightly, use a piping bag to fill each bombolone with Nutella.

Coat in Sugar
In a shallow bowl, mix powdered sugar and vanilla sugar. Roll each bombolone in the sugar mixture until well coated.
