Preparation Steps

Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

Mix the Ingredients
In a separate mixing bowl, whisk together the granulated sugar, eggs, milk, heavy cream, vanilla extract, and salt until well combined.

Combine Chocolate and Mixture
Gradually add the melted chocolate to the egg mixture, whisking continuously until fully incorporated.

Prepare for Baking
Preheat your oven to 160°C (320°F). Pour the mixture into ramekins or small oven-safe dishes.

Bake the Budino
Place the ramekins in a baking dish filled with hot water (water bath) and bake for about 30-35 minutes, until the edges are set but the centers remain slightly wobbly.

Cool and Refrigerate
Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours or until set.

Serve with Toppings
Before serving, sprinkle with cocoa nibs and drizzle with salted caramel sauce.
