Arancini Ingredients

Method

Preparation Directions

  1. 1

    Prepare the Risotto

In a saucepan, heat the vegetable broth over low heat. In a separate pan, sauté the chopped onion and minced garlic until translucent. Add the Arborio rice and stir for a couple of minutes. Gradually add the warm vegetable broth, one ladle at a time, stirring frequently until the rice is creamy and cooked through. Season with salt and pepper.

  2. 2

    Cool the Risotto

Once the risotto is cooked, remove it from heat and let it cool completely. You can spread it out on a baking sheet to speed up the cooling process.

  3. 3

    Form the Arancini

Once the risotto is cool, mix in the grated Parmesan cheese and beaten egg. Take a small amount of the mixture and flatten it in your hand, place a cube of mozzarella in the center, and then shape it into a ball. Repeat until all the mixture is used.

  4. 4

    Coat the Balls

Roll each ball in flour, then dip in beaten egg, and finally coat with breadcrumbs.

  5. 5

    Fry the Arancini

In a deep pan, heat the oil over medium heat. Fry the arancini in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

  6. 6

    Serve

Serve the arancini warm with marinara sauce or your favorite dipping sauce.
