Pasta and Sauce
Method
Cooking Instructions
- 1
Cook the Pasta
In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- 2
Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- 3
Add the Chili and Vodka
Stir in the Calabrian chili paste and cook for another minute. Carefully pour in the vodka and simmer for 2-3 minutes until slightly reduced.
- 4
Incorporate Cream and Cheese
Reduce the heat to low, then add the heavy cream and grated Parmesan cheese. Stir until the cheese is melted and the sauce is smooth. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency.
- 5
Combine Pasta and Sauce
Add the cooked pasta to the skillet, tossing to coat in the sauce. Season with salt and black pepper to taste.
- 6
Serve
Plate the pasta and top each serving with pieces of Burrata di Puglia. Garnish with fresh basil before serving.
