Prepare the Broth
In a saucepan, bring the chicken or vegetable broth to a simmer over medium heat. Keep it warm on the stove while you prepare the risotto.

Sauté Aromatics
In a large skillet or saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute.

Deglaze with Wine
Pour in the dry white wine and stir constantly until the wine has mostly evaporated and the rice has absorbed the liquid.

Add the Broth Gradually
Begin adding the warm broth one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding more broth. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

Once the rice is cooked, remove the skillet from heat. Stir in the grated aged Parmesan cheese, the remaining 2 tablespoons of butter, and season with salt and black pepper to taste.
