    Prepare the Clams

    Preheat your oven to 375°F (190°C). Clean the clams under cold running water to remove any sand or debris. Place them in a large pot with a little water, cover, and steam until they open, about 5-7 minutes. Discard any that don’t open.

    Make the Filling

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and diced poblano pepper, cooking for an additional 2-3 minutes. Stir in the chorizo and cook until browned, about 5-7 minutes.

    Combine Ingredients

    In a large bowl, mix the cooked chorizo mixture with breadcrumbs, grated Parmesan cheese, lemon juice, salt, black pepper, and chopped parsley until well combined.

    Stuff the Clams

    Spoon the filling into the opened clam shells, packing it down gently. Place the stuffed clams on a baking sheet.

    Bake the Clams

    Bake in the preheated oven for 15-20 minutes, or until the tops are golden brown and crispy.

    Remove from the oven and let cool slightly before serving. Garnish with additional chopped parsley if desired.
