Preparation and Cooking

    Caramelize Onions

    In a skillet over medium heat, add a tablespoon of oil and sauté the sliced onions until they are soft and golden brown, about 15 minutes. Remove from heat and let cool.

    Cook the Steak

    In the same skillet, add the diced prime steak and cook until browned, about 5-7 minutes. Stir in the minced garlic and soy sauce, and season with pepper. Remove from heat and let cool.

    Combine Filling

    In a mixing bowl, combine the caramelized onions, cooked steak, and shredded Cooper cheese. Mix well.

    Assemble Eggrolls

    Lay an eggroll wrapper on a flat surface with one corner pointing towards you. Place about 2 tablespoons of the filling in the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top edge with a little water.

    Fry the Eggrolls

    In a large pot or deep fryer, heat the oil to 350°F (175°C). Fry the eggrolls in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

    Serve

    Serve hot with a side of Poblano pepper sauce.
