Prepare the BBQ Sauce
In a saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and black pepper. Simmer over low heat for 10 minutes, stirring occasionally, until the sauce thickens.

Cook the Sweet Potato Hash
Peel and dice the sweet potatoes into small cubes. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the sweet potatoes, onion, and red bell pepper. Season with salt and pepper. Cook for 15-20 minutes, stirring occasionally, until sweet potatoes are tender and slightly crispy.

Sear the Scallops
Pat the scallops dry with paper towels and season with salt and black pepper. In another skillet, heat the remaining tablespoon of olive oil over high heat. Once hot, add the scallops and sear for 2-3 minutes on each side until golden brown and cooked through.

Plate the sweet potato hash, top with seared scallops, and drizzle with the homemade BBQ sauce. Serve immediately.
