For the Maple BBQ St. Louis Ribs

    Prepare the Ribs

    Preheat your grill or smoker to 225°F (107°C). Remove the membrane from the back of the ribs if it's still attached.

    Make the BBQ Sauce

    In a medium saucepan, combine maple syrup, apple cider vinegar, ketchup, brown sugar, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Bring to a simmer over medium heat and cook for 10-15 minutes until slightly thickened.

    Cook the Ribs

    Place the ribs on the grill or in the smoker, bone side down. Brush with the BBQ sauce. Cook for about 3-4 hours, basting with more sauce every hour, until tender.

    Finish the Ribs

    Once the ribs are tender, increase the heat to 350°F (175°C) and cook for an additional 15-30 minutes, basting with sauce until caramelized.

For the Fuji Apple & Jicama Slaw

    Prepare the Slaw

    In a large bowl, combine the sliced Fuji apples, julienned jicama, shredded red cabbage, grated carrots, and chopped cilantro.

    Make the Dressing

    In a small bowl, whisk together lime juice, olive oil, salt, black pepper, and honey.

    Combine

    Pour the dressing over the slaw mixture and toss to combine. Let it sit for at least 15 minutes before serving to allow the flavors to meld.
