    Prepare the Potatoes

    Wash and peel the russet potatoes. Using a mandoline or sharp knife, slice the potatoes thinly, about 1/8 inch thick.

    Soak the Slices

    Place the sliced potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    After soaking, drain the potatoes and lay them out on a clean kitchen towel or paper towels. Pat them dry thoroughly.

    Heat the Oil

    In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add a handful of potato slices to the hot oil, being careful not to overcrowd the pot. Fry until golden brown and crisp, about 3-4 minutes.

    Drain and Season

    Use a slotted spoon to remove the chips from the oil and transfer them to a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt, paprika, and garlic powder to taste.

    Continue frying the remaining potato slices in batches until all are cooked and seasoned.

    Serve the house-made chips warm as a snack or side dish.
