Prepare the Chicken
Preheat your oven to 375°F (190°C). Rinse the chicken and pat it dry with paper towels. Place the chicken in a roasting pan.

Make the Herb Mixture
In a small bowl, combine olive oil, chopped rosemary, thyme, parsley, minced garlic, salt, and black pepper. Mix well.

Season the Chicken
Rub the herb mixture all over the chicken, making sure to get under the skin as well for maximum flavor.

Roast the Chicken
Place the chicken in the preheated oven and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.

Prepare the Poblano Pepper
During the last 30 minutes of roasting, add the fire-roasted poblano pepper to the pan to allow it to cook alongside the chicken.

Serve
Once done, remove the chicken from the oven and let it rest for 10-15 minutes. Serve with spicy green chili sauce and the roasted poblano pepper.
