Add Garlic and Deglaze
Stir in the minced garlic and cook for an additional 2 minutes. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Allow the wine to reduce for about 5 minutes.

Simmer the Soup
Add the beef broth, thyme, bay leaves, salt, and pepper to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.

Add Cheese and Bake
Sprinkle the grated Fontina and Gruyere cheese generously over the baguette slices. Place the bowls on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the cheese is bubbling and golden.
