    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the soaked potatoes and pat them dry with a clean kitchen towel.

    Heat the Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add a handful of the dried potato strips to the hot oil. Fry them in batches to avoid overcrowding, for about 5-7 minutes or until golden brown and crispy.
