    Prepare the Filet Mignon

    Cut the filet mignon into small cubes.

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add the onion, garlic, and bell pepper. Sauté until softened, about 5 minutes.

    Brown the Meat

    Add the cubed filet mignon to the pot and cook until browned on all sides.

    Add Remaining Ingredients

    Stir in the diced tomatoes, kidney beans, chili powder, cumin, salt, black pepper, and beef broth. Bring to a simmer.

    Simmer

    Reduce heat to low and let the chili simmer for 30-40 minutes, stirring occasionally.

Cheesy Cornbread Biscuit

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Mix Dry Ingredients

    In a bowl, whisk together cornmeal, flour, baking powder, and salt.

    Add Wet Ingredients

    In another bowl, mix the milk, egg, and melted butter. Combine with the dry ingredients and fold in shredded cheddar cheese.

    Spoon the batter onto a baking sheet and bake for 15-20 minutes or until golden brown.
