Prepare the onions
Slice the onion into thin rings. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onions and a pinch of salt, cooking until they are caramelized and golden brown, about 10-15 minutes. Remove from heat and set aside.

Cook the steak
Season the flatiron steak generously with salt and pepper. In the same skillet, add the remaining tablespoon of olive oil over high heat. Once hot, add the steak and sear for about 4-5 minutes per side for medium-rare, or until your desired doneness. Remove from heat and let it rest for 5 minutes.

Assemble the sandwich
Slice the steak against the grain. On one slice of toasted challah, spread 1 tablespoon of chipotle mayo, add slices of steak, top with havarti cheese, and finish with the caramelized onions. Top with another slice of challah and repeat for the remaining sandwiches.

Serve
Cut the sandwich in half and serve immediately with your choice of side.
