Preparation and Cooking

Prepare the Chicken

Pound the chicken breasts to an even thickness. Season with salt and pepper.

Set Up Breading Station

In three separate bowls, place the flour, beaten eggs, and a mixture of breadcrumbs and parmesan cheese.

Bread the Chicken

Coat each chicken breast in flour, then dip in the egg, and finally coat with the breadcrumb mixture.

Fry the Chicken

In a large skillet, heat olive oil over medium heat. Fry the chicken breasts for about 4-5 minutes on each side, or until golden brown and cooked through.

Drain and Rest

Remove the chicken from the skillet and let it drain on paper towels.

Assembling the Sandwich

Slice the Focaccia

Cut the focaccia bread in half horizontally.

Spread the Mayonnaise

Spread mayonnaise on both sides of the focaccia bread.

Layer the Ingredients

Place the fried chicken on the bottom half of the focaccia, followed by lettuce and tomato slices.

Complete the Sandwich

Top with the other half of the focaccia and press gently.
