Beef Preparation

Form the Patties
In a bowl, gently mix the Wagyu beef with salt and black pepper. Divide the mixture into two equal portions and form them into patties, about 1 inch thick.

Caramelize Shallots
Slice the shallots thinly. In a skillet, heat 1 tablespoon of olive oil over medium-low heat. Add the shallots and cook, stirring frequently, for about 10-15 minutes until they are golden brown and caramelized.

Prepare Candied Bacon
In a skillet, cook the bacon over medium heat until crispy. Optionally, sprinkle with a bit of brown sugar during the last minute of cooking for extra sweetness. Remove and drain on paper towels.

Assemble the Burgers
Once the patties are cooked, place a slice of cheddar cheese on each patty and cover the skillet for about a minute to melt the cheese. Remove from heat.

Cook the Fries
Prepare the frozen French fries according to package instructions, either by baking or frying them until crispy.

Assemble the Plate
On a serving plate, place a bottom bun, add a Wagyu patty with melted cheddar, a few pickles, caramelized shallots, and a slice of candied bacon. Top with the second patty and drizzle with chipotle sauce. Serve with fries and mixed greens on the side.
