Preparation

    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into small cubes (about 1/2 inch).

    Prepare the Cherry Tomatoes

    Wash the cherry tomatoes and set aside.

    Prepare the Sausage

    If using bacon or sausage links, slice them into bite-sized pieces or keep them whole as preferred.

Cooking

    Cook the Potatoes

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the cubed potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.

    Cook the Sausage

    In a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the bacon or sausage pieces and cook until browned and cooked through, about 5-7 minutes.

    Cook the Eggs

    In the same skillet used for the potatoes, crack the eggs directly into the pan. Cook to your desired doneness (sunny-side up, over-easy, or scrambled) for about 3-5 minutes.

    Add Cherry Tomatoes

    When the eggs are almost finished cooking, add the cherry tomatoes to the skillet and cook for an additional 2 minutes until they are warmed through.

Serving

    Plate the Dish

    Once everything is cooked, carefully plate the potatoes, sausage, eggs, and cherry tomatoes. Garnish with fresh parsley if desired.
