    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to form fries.

    Soak the Potatoes

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    After soaking, drain the fries and pat them dry with paper towels to remove any excess moisture.

Cooking

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Carefully add the dried fries in batches to the hot oil. Fry until golden brown and crispy, about 4-5 minutes per batch.
