Seasoning
Method
Preparation
- 1
Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to form fries.
- 2
Soak the Potatoes
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.
- 3
Dry the Potatoes
After soaking, drain the fries and pat them dry with paper towels to remove any excess moisture.
Cooking
- 4
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
- 5
Fry the Potatoes
Carefully add the dried fries in batches to the hot oil. Fry until golden brown and crispy, about 4-5 minutes per batch.
- 6
Drain the Fries
Remove the fries from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
Finishing Touches
- 7
Season the Fries
While the fries are still hot, drizzle the truffle oil over them and sprinkle with kosher salt. Toss to ensure even coating.
- 8
Add Cheese and Parsley
Sprinkle the freshly grated Parmesan cheese and chopped parsley over the fries while they are hot. Toss gently to combine.
