Method

Preparation

  1. 1

    Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

  2. 2

    Add Tomatoes and Broth

Pour in the canned whole tomatoes (with their juices) and vegetable broth. Bring the mixture to a simmer, stirring occasionally.

  3. 3

    Season the Soup

Add the sugar, salt, black pepper, dried basil, and dried thyme. Simmer uncovered for about 20 minutes to allow the flavors to blend.

  4. 4

    Blend the Soup

Using an immersion blender, carefully blend the soup until smooth. Alternatively, you can transfer the soup in batches to a blender.

  5. 5

    Add Cream

Stir in the heavy cream and heat through on low heat without boiling. Adjust seasoning if necessary.

Serving

  1. 6

    Garnish and Serve

Ladle the bisque into bowls and garnish with fresh basil leaves and croutons. Serve warm.
